McLean Beef Butcher Shop in York Nebraska is currently hiring for a Lead Butcher/Production Manager for our new facility. Salary: $45,000 $60,000 Depends on experience and education. As Lead Butcher you will be responsible for all activities in the plant production area that includes: animal harvesting, kill floor activities, manage the prechill and holding coolers effectively, direct work process within the meat processing, smoke room and packaging, and coordinate all the staff in the production area. This position reports to the Site Manager. Other role tasks include: * assisting the Site Manager with hiring (interviews, communication on choosing new workers) * assist the Site Manager with all required documentation for USDA certification. * coordinate the custom kill requests along with the Supply Chain Manager * train production staff * maintain proper credentials for cutting meat (depending on the markets and types of animals processed) * maintain the highest quality products that are offered for sale * assist the Site Manager to ensure that all federal, state and local regulations are kept in compliance (HACCP, etc) * keep the appropriate amount of supplies on hand for production requirements * maintain the appropriate amount of finished goods (fill out-of-stock items or limit overstock waist) * ensure safety of all production workers Experience prior butchery, 1 year (Required) raw meat cutting, 1 year (Preferred) retail meat cutting, 1 year (Preferred) Education Preferred to have Bachelor of Science in one of the following: Meat Processing & Food Safety or Meat Culinology.
